Baked Cheesy Chicken Pasta
I tried this recipe tonight and everyone liked it. It was a simple, put together kind of meal and it generously fed our family of 4 + 2 additional kiddos and we still have a container of leftovers (NOTE: I kind of did my own thing with the amount of chicken and pasta so the serving size as noted on the recipe does not match with what I’m saying how many it fed).

- I added one extra tablespoon of butter. One – I was lazy and already had 4 tablespoons and two – I knew I was making a bit extra for feeding more peeps.
- I personally added finely chopped onion to the butter and cooked them until they were soft before adding in the garlic.
- I also chose to add some Italian & Oregano seasoning to the pasta while it was boiling.
- I didn’t have straight up parmesan cheese so I used an Italian blend + Mozzarella.
- Due to ‘eyeballing’ the pasta amount – I did add a bit more milk to the mixture while stirring it all together.
Sides that could be added would be bread and/or veggies. I like to do vegetables but tonight I kept it simple with one dish.

Oh, what about doing grilled shrimp with it?!!? So, I’d prepare the pasta part and instead of adding chicken, serve shrimp with it (or do both). Or, if you’re a pepper lover, you could add peppers for different flavoring. I think it’s definitely a dish you can play around with and still have it taste good.
