Baked Cheesy Chicken Pasta

I tried this recipe tonight and everyone liked it. It was a simple, put together kind of meal and it generously fed our family of 4 + 2 additional kiddos and we still have a container of leftovers (NOTE: I kind of did my own thing with the amount of chicken and pasta so the serving size as noted on the recipe does not match with what Iโ€™m saying how many it fed).

  • I added one extra tablespoon of butter. One โ€“ I was lazy and already had 4 tablespoons and two โ€“ I knew I was making a bit extra for feeding more peeps.
  • I personally added finely chopped onion to the butter and cooked them until they were soft before adding in the garlic.
  • I also chose to add some Italian & Oregano seasoning to the pasta while it was boiling.
  • I didnโ€™t have straight up parmesan cheese so I used an Italian blend + Mozzarella.
  • Due to โ€˜eyeballingโ€™ the pasta amount โ€“ I did add a bit more milk to the mixture while stirring it all together.

Sides that could be added would be bread and/or veggies. I like to do vegetables but tonight I kept it simple with one dish.

Oh, what about doing grilled shrimp with it?!!? So, Iโ€™d prepare the pasta part and instead of adding chicken, serve shrimp with it (or do both). Or, if youโ€™re a pepper lover, you could add peppers for different flavoring. I think itโ€™s definitely a dish you can play around with and still have it taste good.
