Pulled Pork: Instant Pot

I’ve heard good things about Instant Pots but do not have one. Looking up recipes I came across a few that looked yummy but called for an Instant Pot. Thankfully, my brother and sister-in-law were so kind as to let me borrow theirs! πŸ™‚ (As well as extending patience because I was contacting my sister-in-law last night with several questions with this here new kitchen gadget)

THIS – PORK…YUUUUMMMMYYYY

  • I want to say I picked a: Bone-in Pork Butt Roast (I wanted to take a picture of the store label and forgot)
  • I used the dry ingredients: sea salt, black pepper (only used 1/2 tsp, I’m not a big pepper person), onion powder, garlic powder
  • After trimming most of the fat off & cutting it into same size chunks, I sprinkled it with the seasoning (all mixed together first). I then stuck it in a ziploc bag to lay flat on a plate in the fridge because we were having it the next day. I would occasionally flip the bag (whether that did anything or not…who knows but it made me feel better, lol).
  • After sautΓ©ing the meat in olive oil and doing the chicken broth step: You do place the meat back into the instant pot WITHOUT the wire rack thing…so that the meat is sitting directly in the chicken broth. I know that was something I questioned when looking at everything. I was feeling a little overwhelmed and almost missed the directions within the recipe because I was nervous. The instant pot is a big new toy. Lots of buttons and things to take in while also reading a new recipe (mind blown – insert laughter).
  • When it was done, the meat just fell apart as I laid it on the cutting board and started pulling it apart with two forks.
