Simple Homemade Tomato Soup

Below, you’ll find a recipe we have recently tried two different ways. One way I enjoy a bit more and one way my husband finds tastier. NOTE: It is a recipe I found online…credit noted in the author section. At the bottom are the changes I personally made to accommodate my family according to our taste buds (which is one of my favorite parts about cooking – playing with spices because we all have different taste buds and yum factors).

DESCRIPTION:   Simple Homemade Tomato Soup with carrots, onions, garlic, tomatoes, broth, and bacon for deliciously rich flavor. Extremely easy to make!

* Personal Changes / Special Notes:

  • Use regular bacon – NOT turkey bacon. Sharing because I found out the hard way. First time making it, I used regular bacon and it worked great. The second time, I had turkey bacon so I used that and it does not puree nicely. It stays in small pieces. Very small but enough to give it a texture.
  • If you like more of a veggie flavored tomato soup – stick with using carrots as noted and use vegetable broth vs chicken broth. VERY Yummy! However, my husband is not a veggie man (claims he’s “allergic” – lol) so second time making it I used less carrots and chicken broth. I also added a bit more tomato paste in with a milk & cornstarch mixture to thicken the soup slightly (and the extra tomato paste gave it a slighter richer tomato taste that my honey was looking for).
  • I have NOT used: Bay Leaf or Thyme (personal preference)
  • I also used fresh tomatoes vs canned
